Grilled Chicken Salad - Monday Munchies

Now that summer is almost over, I'm going to share with you my favorite summer recipe. Ok, who am I kidding. We eat this year round at least twice a month.


~Grill Mates Baja Citrus Marinade
~3 boneless, skinless chicken breasts
~ bag of salad (Romaine is my choice)
~dried cranberries
~can of mandarin oranges
~white cheddar cheese, shredded
~Brianna's Blush Wine Vinaigrette dressing(there is no substitute!)

Grill chicken as directed on the marinade packet.
Put salad in a large bowl. Add cranberries, mandarin oranges, pecans, and cheese to salad while chicken is cooking.
When chicken is no longer pink in the middle, cut into strips or bite size pieces. Add to salad. Mix.
Serve with dressing.
Serves 4 (Probably. Dave and I can eat almost all of it because it is REALLY good.)
Sometimes I just put all ingredients on the table and we make our own salad. Works well if not everyone likes all the ingredients.
