Spring is here! For our family that means baseball season has begun. This year both boys are playing and, as it turns out, their practices are on different evenings. Therefore Monday - Thursday we are out of the house by 5:15PM to get to practice and don't return until after 7PM.
It's both busy and fun. My greatest challenge is meal planning. The last two weeks our family (often without Simms) has sat down for dinner at 4:30PM. Then, after practice, if they are hungry, they can enjoy a piece of fruit or a yogurt before bedtime rather then a full meal. I've definitely utilized the crock pot a few times. We've also had simple meals like grilled cheese and tomato soup. But this is the next two months of our lives and I do not want grilled cheese on a weekly basis. So, I thought, while I am on this journey and discover some new dishes I could at least post a recipe once each week over the next two months.
Without further ado, I give you Laura's Chicken.
Chicken pieces - on the bone - but you could do this with skinless/boneless as well.
Pepper
Garlic Salt
Paprika
Butter (1-2 Tbs)
Place prepared chicken into a baking dish. Sprinkle with spices. Place small cuts of butter over the chicken. Bake uncovered at 350-375 for 30 minutes. Turn chicken over and sprinkle with spices. Bake for another 20-30 minutes. Serve with sides of your choosing.
This recipe is so EASY and leaves room for your personal touch. Trying to cut out salt? Use garlic powder instead of the garlic salt. You could even put together your own combination of spices. This is just the combination that my cousin used and that is why the recipe is named after her.
