Recipe for Kids: Cereal to Go

My daughter's preschool took a fieldtrip to the Young Chefs Academy this week. The chef led the class step-by-step through making muffins. We thought you might like to have the recipe so you can make it with your own kids.

Cereal to Go
1 c. flour
1/4 c. brown sugar
3 t. baking powder
1 t. salt
2 c. breakfast cereal (choose one with at least 5 grams fiber per serving)
1 egg
1/4 c. vegetable oil
1/2 c. milk
1/4 c. honey
Optional add-ins: 1/2 c. dried cranberries, cherries, raisins, or chopped nuts.
Preheat oven to 350 degrees
  1. Prepare muffin pan with cooking spray or paper liners.
  2. In a mixing bowl, combine flour, brown sugar, baking powder, salt and cereal. Mix well.
  3. In a mixing bowl, beat egg with a wire whisk. Whisk together with oil, milk, and honey.
  4. Pour the wet ingredients into the dry and stir just until flour is moist. The batter should be lumpy.
  5. Fill muffin cups 2/3 full with the batter.

Bake 20-25 minutes until golden brown. Remove from pan immediately. Makes 12 muffins.
