Calling All Slow Cookers

Anyone else love the crock-pot? I certainly do these days. It's a means of survival - especially when we have soccer Monday - Thursday evenings. It is the only way that we don't have cereal, eggs or grilled cheese sandwiches as our only meal options.

I recently tried this recipe (unfortunately I cannot locate where I got it from or I would link to it) and the boys loved it. Simms and I thought it was a bit salty but we don't regularly salt our food. Next time I might look for low sodium options but for now, if you are interested in trying something new and VERY easy keep on reading.

Super Easy Pot Roast:

1 beef roast - any kind. (I used 3 lbs)
1 (1.25 oz) package dry brown gravy mix
1 (1.25 oz) dry Italian salad dressing mix
1 (1.25 oz) dry ranch dressing mix
1/2 cup water

1. Place beef roast in crock pot (I always spray my crock-pot first with Pam cooking spray as per Promises suggestion and it makes the clean up a whole lot easier).

2. Mix the dried mixes together in a bowl (I use a fork) and sprinkle over the roast.

3. Pour the water around the roast.

4. Cook on low for 7-9 hours.

I then cook up some egg noodles because this kind of meal reminds me of my Gramma and she always had egg noodles. A healthier option would be some whole wheat pasta. I also add a vegetable and a salad. Yum!

So what's your favorite Crock-Pot recipe?

I'm making a pot roast tomorrow. :) I usually braise the roast before I stick it in the crock pot. I think that's what you call it. I put it in a pan with a bit of oil until both sides are a bit brown.

After that, I just stick it in the pot with a cup of water and a Lipton Onion soup mix packet. The I set it and forget it.

I don't make too many things in the crock-pot, but one we love is just potatoes and baby carrots and chicken breasts with italian dressing, italian seasoning and romano cheese. Yum!!

Family Favorite for The Gang:
4-6 chicken boneless skinless ck. breast (more if you have hoovers!)
16 oz. jar of your favorite salsa

Spray crockpot lightly and toss all in together. Cook on low for at least 8 hours. In last hour, mash chicken against sides of crock till all shredded. Add more salsa if dry. Serve over hot cornbread and top with cheese and sour cream. MMMMM.
